Step-by-step

  1. Drain soaked beans. Cover with 8 cups fresh water. Simmer 60 minutes until starting to soften.

  2. Render bacon in a separate pot until crisp. Brown pork shoulder and ribs in bacon fat.

  3. Add onion, cook 5 minutes. Add garlic, cook 1 minute.

  4. Add browned meats to beans with bay leaves, orange zest, salt, pepper. Add more water if needed to cover.

  5. Simmer covered 60 minutes more. Add sausage final 20 minutes.

  6. Adjust seasoning. Beans should be creamy and stew thick. Discard bay leaves.

  7. Serve over rice with orange slices and sautéed collard greens.

Orange is the secret. its acid cuts the richness. Don't skip the citrus and the cold sliced orange on the side.
