Step-by-step
Heat oil in skillet over medium-low. Add potatoes and onion. Cook 20 minutes, stirring gently, until potatoes are tender but not browned.

Drain oil through a sieve (save it. flavorful, great for cooking).
Beat eggs with salt. Fold in potato mixture. Rest 5 minutes. eggs soak in.
Return 2 tbsp of saved oil to clean skillet over medium heat. Pour in mixture.
Cook 5 minutes shaking the pan gently. Edges set, center still wobbly.
Cover with plate. Invert. Slide tortilla back into pan raw-side down. Cook 4 more minutes.

Slide onto plate. Rest 5 minutes. Cut into wedges. Eat hot, warm, or room temperature.
Cook's tip
The center should be slightly soft and custardy. overcooked tortilla is dry and sad.
Storage
Refrigerate 3 days. Eat cold or room temperature; reheating dries it out.
