Step-by-step
Heat 1 tbsp oil in a wok over high heat. Sear chicken 3 minutes. Add shrimp, cook 90 seconds. Remove.
Add 1 tbsp oil. Fry shallots, garlic, chili, and shrimp paste for 90 seconds until intensely fragrant.
Toss in cold rice. Press flat. Let it sit untouched 45 seconds to crisp. Toss. Repeat.
Drizzle kecap manis and soy sauce around the edge of the wok. Toss until rice is glossy and evenly colored.
Return chicken and shrimp. Toss 30 seconds.
In a separate skillet, fry eggs in remaining oil over high heat until edges are crispy and yolks runny.
Plate rice. Top with egg. Garnish with fried shallots. Serve with cucumber and tomato.
Cook's tip
Kecap manis is a sweet syrupy soy sauce, not regular soy. Find it at Asian markets or sub: 2 tbsp soy + 1 tbsp brown sugar simmered 1 minute.
Storage
Best fresh. Refrigerate 3 days. Re-stir-fry to reheat.
Freezer: Texture suffers, skip.
