Step-by-step

  1. Heat oven to 325°F. Pat beef dry, season generously.

  2. Render bacon in Dutch oven until crisp. Remove, leaving fat.

  3. Brown beef in batches, 3 minutes per side. Do not crowd. Remove.

  4. Sauté onion and carrot in pot 5 minutes. Add garlic, tomato paste, cook 1 minute.

  5. Sprinkle flour, stir 1 minute. Pour wine, scrape the bottom. Add broth, herbs.

  6. Return beef and bacon. Cover, transfer to oven. Braise 2.5 hours until fork-tender.

  7. Sauté pearl onions and mushrooms in butter until golden, 8 minutes. Fold into stew.

  8. Rest 10 minutes. Discard thyme stems and bay. Adjust seasoning. Serve over potato puree or noodles.

Make it a day ahead. it tastes dramatically better after 12 hours in the fridge.
