Step-by-step

  1. Heat oven to 350°F. Grease and line two 9-inch pans.

  2. Whisk flour, baking soda, baking powder, cinnamon, nutmeg, salt.

  3. Whisk eggs, both sugars, oil, and vanilla 2 minutes until well combined.

  4. Fold in dry ingredients until just combined.

  5. Fold in carrots, pecans, and raisins.

  6. Divide between pans. Bake 32–35 minutes until a toothpick comes out with moist crumbs.

  7. Cool in pans 15 minutes, then on a rack completely.

  8. Beat cream cheese and butter until smooth. Add powdered sugar and vanilla. Beat fluffy.

  9. Frost between layers and on top. Refrigerate 30 minutes before slicing.

Grate carrots fresh. pre-shredded carrots are dry and woody. Oil (not butter) keeps the crumb tender for days.

Storage

Refrigerate covered 5 days.
